The first time Rebecca had this recipe was Thanksgiving 2024 when Chef Alli was kind enough to send her home with an apple galette for the holiday. The cardamom and orange in this whip was a unique surprise, piquing Rebecca's curiosity and making the dessert taste extra "chef-y." Therefore, when it came time to demonstrate the Ankarsrum as part of World Bread Day 2025, Rebecca knew she wanted to include this whipped cream recipe as part of the demo. Given the rave reviews from our demo guests that day, it was a no-brainer that it must be shared with the broader East Elm community, too!
This spiced whip is fantastic on top of all sorts of pies, but you can also add on top of your coffee or hot cocoa to make an extra special, decedent treat.

Ingredients
- 2 Cups heavy whipping cream
- 3 Tbsp. maple syrup
- 1 tsp. ground cardamom
- Zest from 1 small orange
Instructions
- Add heavy cream to bowl of your stand mixer - we prefer the Ankarsrum Assistent Original Mixing Machine fitted with the beater bowl and balloon whisks!
- Turn mixer speed to low
- Add maple syrup, cardamom, and orange zest
- Turn mixer speed to medium/medium-high and whip until stiff peaks form
Rebecca's Notes
- You can modify the spices as you like, to taste - play with cinnamon, nutmeg, or clove, or a combination!
- As written, this whip is subtly sweet and spiced. If you want to up either, add an additional tablespoon of maple syrup or go up to 2 total teaspoons of cardamom (or other spice variation)
